CASPER, Wyo. — Owners of the popular Casper food truck J & D’s Cajun Kitchen are giving Casper a parting gift before they relocate back to their home state of Louisiana.

Fittingly, they’re doing it in true Louisiana style: During the New Orleans Saints season opener on Sept. 10.

“This is our way of saying ‘thank you’ to Casper for a great three years,” said Joshua Boutte in an email to Oil City News. He and his wife, Dia, launched the food truck in 2021 with the intention of bringing authentic Cajun food to Wyoming.

“As my new job takes us back to Louisiana we are heartbroken to leave our friends and customers in Casper,” he continued. “We look at the last thee years as a chance we had to share our culture with Casper, through our food, generosity, and love for all things Cajun. Hopefully we did that with joie de vie (joy of life) and gratitude.”

The final and free Cajun fest by J & D’s starts at 10:30 a.m. at Frontier Brewing Company in downtown Casper. The Saints will play the Tennessee Titans, which will be shown on Frontier’s big screen. Kickoff is at 11 a.m.
