CASPER, Wyo. – The first few days of operation took the owners of the new El Ranchito food truck by surprise.
“We closed for restocking because we ran out of food,” said co-owner Chantel Peña.
“We thought we were overstocked, but just the support has been unbelievable. We’re really happy.”

Peña runs the truck with her aunt and her grandmother, Martha Peña, using recipes that come from the family’s roots in the northern Mexico state of Chihuahua.
The family came across an available food trailer from Sheridan that once sold Thai food. “We talked about it as a family and decided to buy it,” she said. “We had it since May but we had to put a lot of work into it to meet regulations and codes.”
Peña says the food is “authentic Mexican,” with street tacos, burritos and quesadillas in the staring roles, and the addition of tamales on weekends.
Eventually they’d might expand the menu to include breakfast burritos.
Currently the truck has been operating mainly at the Hub Floor Covering parking lot at 314 N Mckinley St. “Eventually we want to get moving around,” said Peña. “We’ve had the evening food markets contact us and the breweries.”
“We’re excited to reach out to more people,” she said. “People say ‘where I come from we had this kind of food,’ and we’re happy to make that.”
